This blend of Hard Red Wheat has been designed for artisan bread by Artisan Bread Bakers. Our Type 80 flour is perfect for sourdough, rustic European, and American style breads of any shape and size. This flour also works very well in bread machines and for making: laminated doughs (like croissants); quick breads (like banana bread); brownies; and, is spectacular for making cookies with a chewy texture.

Type 80 refers to the amount of 'ash' (which are minerals) that remain in the flour after the wheat has been milled. The higher mineral content increases the nutritional value of the flour without compromising its baking performance. This flour is not quite white flour and not quite whole wheat flour, but looks very similar to the All Purpose flour you are used to.

Never! None of the products made by Central Milling are bromated. All wheat flour produced by Central Milling is Non-GMO. In fact, currently the US has not approved any GMO wheat for sale. Those little specs in your flour are bits of the bran and the germ that are intentionally left in the flour to increase the flavor, nutrition, and look of the flour. The higher the number, the closer to whole grain the flour is. A number in the name of a flour is an indication of the ash content of that flour.

The wheat used in this flour is grown organically in high mountain valleys on family owned farms. Milled 100% whole and sifted to a lighter color to replicate European styles of flour. Contains no additives, is certified Organic, GMO-Free, Kosher, and Vegan. Will maintain freshness for 25 years when stored in a cool dark room in an airtight container with an Oxygen Absorber Packet.
